
Asparagus with ham and Sbrinz AOP

Yogurt dip with chives:
125 g of natural yoghurt
1 tablespoon chives
Salt, Pepper
500g white asparagus, peeled and woody ends removed
lemon juice
Chopped 4 slices of cooked ham, cut into thin strips
1 pinch nutmeg
1 tablespoon chopped almonds, lightly browned
4 tablespoons parsley, chopped
75 g Sbrinz AOP, sliced into fine shavings
Salt, Pepper
Time required: Preparation: 15 min. Cooking time: 15 min.
Preparation
Yogurt dip with chives:
Mix in a bowl the yogurt and chives. Season it with salt and pepper.
Bring salted water with a little lemon juice to boil and use it to cook the peeled asparagus for about 15 minutes. Drain.
Arrange the asparagus on a plate in one direction and decorate with the ham. Season with nutmeg and almonds, parsley and Sbrinz AOP.
Serve the plate with the yoghurt and chive dip.
