Zibelechueche - Bernese Onion Pie

Bernese onion cake. For Bernese people, winter cannot begin without the Onion Market.

And this event of high tradition would be nothing without the onion cake. On this day, the inhabitants of the federal city devour thousands of them. On the fourth Monday in November, thousands each year, on this official holiday, flock to the Zibelemärit, a popular festival during which artistically braided onions are sold in the old town of Bern.The market opens around three or four o'clock in the morning, and ends at four o'clock with a confetti battle followed by family or social evenings.


Recipe for Swiss Emmentaler AOP and Bernese Onion Pie


  • 1 1/3 cups onions
  • 2 1/2 oz of bacon
  • 1/3 cup Swiss Emmentaler AOP
  • 1/2 cups milk
  • 1/2 cups cream
  • 1 egg
  • 1 1/3 tbsp flour
  • Salt, pepper, paprika

For the dough:

  • 1/3 cup butter
  • 1/3 cup lard
  • 1 cup of flour
  • 1.7 fl oz of water
  • Salt


The day before: add the diced butter and lard to the flour. Rub everything between your fingers until lumpy. Add the water and salt. Quickly assemble everything into a paste. Roll out the dough, spread it in the greased baking sheet and let it rest overnight in the fridge.

On the day of preparation: preheat the oven to 375F. Prick the dough with a fork. Cut the onions in half and then cut them into 3 slices. Grill the bacon in a dry non-stick pan. Add the onions and sauté briefly. Let cool in a bowl. Add the cheese, mix. Spread over the dough.
