The herdsmen from Appenzell have always known how to make a virtue out of necessity: they created Appenzeller® Brown Label a long time ago, by using most of the valuable cream to make nutritious butter. They then used the semi-skimmed milk to create a low fat cheese that satisfied their hunger during the alpine grazing season. The potent, sharp taste of this ancient Appenzeller® makes every fondue and every traditional Swiss cheese macaroni truly remarkable.
