Raclette du Valais AOP is a 100% natural product, beginning with the feeding of the cattle and incorporating the processing of unpasteurised milk, right up to the treatment in the maturation cellar. It is totally unique thanks to its “terroir”, its history and its regional characterisation, which is imprinted on the hoop side. The rich flora of the Valais mountain and alpine regions lend the Raclette du Valais AOP its unique fresh and tangy taste with its many flavour variations. In October 2007, the cheese was awarded the protected designation of origin “AOP”.
