“Alpine dairyman dream” burger with Appenzeller® cheese

Ingredients per burger:
2 slices of mildly spicy Appenzell® cheese
1 ciabatta roll
about 150 g beef tenderloin
1-2 lollo bianco leaves
2 bacon strips
1 small onion, sliced into rings
Grilled red pepper
Season beef tenderloin with salt and pepper. Cook on hot grill or in pan until light pink. Let stand briefly. Fry bacon in pan until crispy, remove and sauté onion rings in fat until golden.
Slice ciabatta rolls in half and lightly toast cut surfaces. Cover lower half of the roll with lettuce leaves and season to taste with mustard sauce or remoulade. Slice meat diagonally and place on lettuce. Place both slices of Appenzell® cheese on meat. Season again with a sauce of your choice. Place bacon, peppers and onions on top and cover with upper half of roll.
