  • 800 g portioned Swiss raclette cheese
  • 800 g parboiled potatoes
  • Pearl onions
  • Gherkins
  • Spring ingredients:
  • • White asparagus tips
  • • Raw ham slices
  • • Blanched snow peas
  • • Steamed young garlic
  • Summer ingredients:
  • • Celery stalks, cut into small stalks and blanched
  • • Blanched lettuce
  • • Basil leaves
  • • Grilled pepperoni, cut into strips
  • Autumn ingredients:
  • • Thinly sliced pears
  • • Cooked corn cobs with kernels removed
  • • Grapes
  • Winter ingredients:
  • • Fried veal escalopes
  • • Chutney, e.g. from raisins
  • • Blanched pumpkin pieces

Preparation

  1. Here is a raclette preparation geared to the practical individual raclette trays. For raclette, place cheese slices in raclette trays, season to taste with paprika or pepper, and let melt. Serve with parboiled potatoes, gherkins and pearl onions. For “seasonal” raclettes, place different ingredients in raclette trays, top with raclette cheese and let melt in raclette oven. Serve with potatoes.
