Cauliflower, beans and Appenzeller® cheese in cheese batter, with sweet and sour apricots

  • 150 g of cooked cauliflower florets
  • 150 g of cooked green beans
  • 100 g of spicy Appenzeller®, cut into 10-20 g pieces

sweet and sour apricots

  • 150 g of apricots, quartered
  • 1 small shallot, cut into thin strips
  • 1/2 a clove of crushed garlic
  • 50 g of sugar
  • 1 dl of white wine vinegar

  1. 1 Bring the apricots, shallots, garlic, sugar and vinegar to the boil; then reduce to a chutney.
  2. 2 Mix all the ingredients for the batter. Cover and let stand for about 30 mins.
  3. 3 Heat the frying oil to 180°C. Dip the vegetables and pieces of cheese into the batter and fry.
  4. 4 Serve on plates together with the sweet and sour apricots.
