Cheese and melon salad with a pink pepper sauce

  • 1 tsp of mustard
  • 1 tsp of honey
  • 2 tbs of white balsamic vinegar
  • 4 tbs of rapeseed oil
  • 1 tsp of pickled pink pepper, drained and chopped
  • 1 tbs of chopped chives
  • salt
  • 4 handfuls of lettuce such as oak leaf or lollo
  • 2 Cavaillon melons, seeded and diced
  • 150 g of spicy Tilsiter slivers
  • 1 sachet of mozzarelline, drained
  • chives for garnishing

  1. 1 Stir all the ingredients for the sauce together and season with salt.
  2. 2 Serve the lettuce in individual salad bowls. Mix the melon, Tilsiter and mozzarelline and spread on the lettuce. Dribble on the sauce and garnish.
