Ingredients

Makes 1 loaf with about 35 slices

  • Dough:
  • 500 g white flour
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • 1/2 crumbled yeast cube
  • 60 g soft butter
  • around 3 dl lukewarm milk
  • Filling:
  • 200 g green TILSIT cheese, coarsely grated
  • 350 g roast veal
  • 50 g finely chopped Mostbröckli (raw-meat beef sausage)
  • 1 finely chopped onion
  • 4 coarsely chopped gherkins
  • 1 bunch finely chopped parsley
  • 1 tsp paprika
  • 1/4 tsp salt
  • 100 g green TILSIT, coarsely grated

Preparation

  1. Dough: Mix flour, salt, sugar and yeast in a bowl. Add butter and milk and knead into a smooth dough. Cover dough and let rise for around 1 hr at room temperature until it has doubled in volume.
  2. Filling: Mix TILSIT thoroughly by hand with all ingredients, including salt.
  3. Shapes: Roll out dough with a bit of flour to 3 mm thickness. Using a cutter (around 9 cm in diameter), form into rounds. Place around 1 tbsp filling on each and sprinkle with TILSIT. Fold rounds so that filling is visible for around 1 cm on the upper edge. Press pastry pieces together sideways into circles on a baking tray lined with baking paper.
  4. Baking time: 30-35 minutes in the lower half of an oven preheated to 200 °C.
