Ingredients

Serves 4

  • 75 g bacon cubes
  • 4 small potatoes, cooked and diced
  • 4 chopped spring onions
  • 8-10 quartered mushrooms
  • 6 eggs
  • 150 g Swiss Emmental AOP
  • 1 tsp butter
  • Salt and pepper

Preparation

  1. Grate Emmentaler AOP and preheat oven to 180 ° C.
  2. Fry bacon cubes in a hot pan and put aside. Fry potatoes, spring onions and mushrooms.
  3. Beat eggs, season with salt and pepper, and mix in with grated Swiss Emmental AOP.
  4. Pour bacon, potatoes, spring onions and mushrooms into a buttered baking dish. Top with cheese and egg mixture and brown in oven for around 18 minutes.
