Marinated cheese with fruit and nuts

serves four

  • 300 g of mild Tilsiter or Appenzeller cheese, cut into 1/2 cm thick slices


  • 1 dl of white wine or apple juice
  • 1 tbs of fennel seed
  • 1stick of cinammon
  • 1 onion, cutinto rings
  • 3-4 tbs of sugar


  • 1 apple and 1 pear, cut into slices
  • some dried cranberries and apricots (diced)
  • chopped pistachios

  1. 1 Cut the cheese ito triangles
  2. 2 Bring to the boil all the ingredients for the marinade and then reduce a little. Cover and leave to cool.
  3. 3 Remove the cinammon stick. Place the cheese in the marinade.Cover and allow to marinate overnight in the fridge.
  4. 4 Serve the marinated cheese on plates. Dribble the marinade on the cheese and garnish with fruit and nuts.
