Mozzarella in carrozza

  • 8 slices of toast bread
  • 3-4 tbs of capers, rinsed and chopped
  • 150 g of mozzarella, cut into 8 slices
  • 1 egg
  • 2 tbs of milk
  • salt and pepper
  • flour for dipping
  • cooking butter or cooking cream

  1. 1 Scatter capers on the toast bread slices, lay on the slices of mozzarella and season with pepper. Make 4 sandwiches out of the 8 layered slices, pressing the halves firmly together.
  2. 2 Whisk the egg, milk, salt and pepper together. Dip the sandwiches firstly in the flour, then in the egg mixture.
  3. 3 Fry for 5 mins. in the cooking butter on a medium heat, turning over occasionally. Serve hot.
