Omelette Appenzeller style

For 4 people Difficulty: easy

  • 80 g Appenzeller® CLASSIC, grated
  • 50 g bacon or ham
  • 250 g potatoes, boiled in their skins
  • 1 onion
  • 1–2 cloves of garlic
  • 400 g vegetables e.g. courgettes, peppers and leeks
  • 2 tablespoons butter for frying
  • 8 eggs
  • 10 ml milk
  • Salt, pepper, nutmeg


  1. Cut the bacon or ham and potatoes into cubes. Chop the onion and garlic. Cut the vegetables into small pieces.
  2. Fry the potatoes in 1 tablespoon butter in another frying pan. Add the onion, garlic and vegetables and fry for approximately 5 minutes. Mix in the meat. Season with a little salt.
  3. Mix Appenzeller® CLASSIC, eggs, milk and seasoning together well and pour over the vegetables. Occasionally push backwards and forwards with a fish slice until the egg mixture is slightly flaky.
  4. Fry the underside until golden yellow without stirring; the surface must remain moist. Serve immediately..
