Summer salad with melon, ham, cucumber and Le Gruyère d’alpage AOP

Serves 6

  • Vinaigrette:
  • 6 tbsp lemon juice
  • 100 g extra native olive oil
  • 2 tsp honey
  • Salt and pepper
  • Salad:
  • 125 g Gruyère d'alpage AOP
  • 1 melon
  • 1 cucumber
  • 1/2 red onion
  • 1 bunch fresh lemon thyme
  • 12 slices raw ham
  • Green garlic


  1. For the vinaigrette, mix lemon juice with olive oil, honey, salt and pepper and set aside. Cut melon into little balls, thinly slice cucumber and place in a large salad bowl. Add finely chopped onion, ham cut into bite-sized pieces, thyme and green garlic and mix together with vinaigrette. Before serving, cut and add cubes of Gruyère d’alpage AOP.
