Swiss raclette with apple chutney

Ingredients

Serves 4

  • 800 g raclette cheese, sliced
  • Freshly ground pepper
  • Paprika
  • Apple chutney:
  • 250 g unpeeled tart apples, e.g. russet, Gravenstein or Cox Orange, finely diced
  • 1 finely chopped onion
  • 2 tbsp currants
  • 30 g sugar
  • 4 tbsp apple vinegar
  • 1 tbsp grated ginger root
  • 1/2 cinnamon stick
  • 2 cloves
  • 1 small chili pepper, halved and deseeded
  • Salt according to taste

Preparation

  1. Dice apples and onions, peel and grate ginger root, then fry mixture in pan.
  2. Mix in currants, sugar and apple vinegar. Add cinnamon, cloves and chili pepper. Bring to the boil while stirring and cook 10-15 minutes. Remove spices.
  3. Melt cheese in raclette oven and eat with apple chutney.
