Swiss raclette with smoked duck breast and orange

Serves 4

  • 2 juicy oranges
  • 250 ml orange juice, as freshly pressed as possible
  • 1 tbsp crushed pink pepper
  • 200 g smoked duck breast, thinly sliced
  • 1 red onion
  • 350 g sliced Swiss raclette cheese


  1. Peel and fillet oranges using a knife. Reduce orange juice with pink pepper at low heat until it becomes a syrup. Add orange fillets and marinate.
  2. Peel and finely chop onion.
  3. Place smoked duck breast with marinated orange fillets in raclette trays. Top with cheese slices and onion cubes. Brown in raclette oven to taste.
