Asparagus with ham and Sbrinz AOP

Yogurt dip with chives:

  • 125 g of natural yoghurt
  • 1 tablespoon chives
  • Salt, Pepper
  • 500g white asparagus, peeled and woody ends removed
  • lemon juice
  • Chopped 4 slices of cooked ham, cut into thin strips
  • 1 pinch nutmeg
  • 1 tablespoon chopped almonds, lightly browned
  • 4 tablespoons parsley, chopped
  • 75 g Sbrinz AOP, sliced into fine shavings
  • Salt, Pepper


Yogurt dip with chives:

  1. Mix in a bowl the yogurt and chives. Season it with salt and pepper.
  1. Bring salted water with a little lemon juice to boil and use it to cook the peeled asparagus for about 15 minutes. Drain.
  2. Arrange the asparagus on a plate in one direction and decorate with the ham. Season with nutmeg and almonds, parsley and Sbrinz AOP.
  3. Serve the plate with the yoghurt and chive dip.
