Ingredients

serves four

knöpfli batter:
  • 400 g of flour
  • 1 tbs of salt
  • 4 eggs
  • 2 dl of water
  • 1 tbs of butter for browning, according to taste
breadcrumbs:
  • 30-40 g of butter
  • 50 g of breadcrumbs
  • 100 g of grated Emmentaler AOP oder Gruyère

Preparation

knöpfli batter:
  1. 1 For the batter: Mix together the flour and salt in a large bowl. Beat the eggs and stir into the water. Add to the flour. Beat the batter with a ladle until it is smooth and bubbly. Cover and allow to stand for 30 mins. at room temperature.
  2. 2 Scrape the batter bit by bit through a knöpfli sieve into boiling salt water. After 3-5 mins. remove the knöpfli from the water with a skimming ladle. Drain and keep warm. According to taste, one can also then fry them in butter till crisp and golden yellow.
  3. 3 Breadcrumbs: Melt the butter in the pan. Add the breadcrumbs and fry over a medium heat for 2-3 mins.until golden yellow.
  4. 4 Serve the knöpfli on plates and sprinkle with breadcrumbs and cheese.
Preparation hint

Serve with apple puree The batter can be seasoned with a sachet of saffron or 1/2 a tbs of curry powder. Flavour the breadcrumbs with chopped sage.
