Mesclun salad with a Sbrinz AOP cheese vinaigrette

Ingredients

serves 4-6

  • approx. 300 g of mixed green salad, such as lettuce, cicorino verde, Romaine lettuce, curly lettuce, cress, purslane
  • 1-2 handfuls of mixed, wild herbs such as wild garlic, sorrel, dandelion, rocket, watercress
  • 2-3 sprigs of herbs such as chervil, savory, broad-leafed parsley, tarragon
  • 1-2 handfuls of edible flowers such as carnations, chive flowers
  • approx.100 g of thin slivers of Sbrinz

vinaigrette:

  • 4 tbs of lemon vinegar
  • 1 tbs of dry white wine
  • 6 tbs of oil
  • 2 tbs of freshly grated Sbrinz AOP
  • 1 small, crushed clove of garlic
  • ½ a tsp of liquid honey
  • salt and pepper

Preparation

  1. 1 Shred the green salads, wild herbs and herbs into edible-sized pieces. Toss with the flowers and Sbrinz in a large bowl.
  2. 2 Mix and season the ingredients for the vinaigrette. Mix the vinaigrette into the salad shortly before serving.
