serves 4

  • 400 g of large hörnli pasta

fried onion rings:

  • 1 onion sliced into rings
  • flour for sprinkling on
  • cooking butter or cooking cream
  • a little salt
  • 1 coarsely chopped onion
  • butter for sautéing
  • 100 g of diced, fatty bacon
  • 1,5 dl of cream
  • 50 g of alpine pasture cheese, grated with a muesli grater
  • salt
  • pepper from a mill
  • a little nutmeg

  1. Cook the hörnli pasta al dente in boiling salt water; strain and briefly keep warm.
  2. Sprinkle the onion rings with flour, and fry till crisp and brown in hot butter. Season.
  3. Sauté the chopped onion in butter. Add the fatty bacon and briefly fry. Pour on the cream and add the hörnli pasta. Allow to thicken. Mix in the cheese and season. Serve with the onion rings.
