Onion-Bündner Bergkäse-Muffin

Ingredients

For 24 minimuffins or 12 muffins

  • 2 large onions
  • 1 tablespoon vegetable oil
  • 80 g of Bündner Bergkäse
  • 250 g flour
  • 2 tsp of baking soda
  • 1/2 teaspoon pepper
  • pinch of salt
  • 2 eggs (size M)
  • 90 ml of vegetable oil
  • 200 g of sour cream
  • 5-6 branches of fresh thyme
  • Some grease for the molds

Preparation

  1. Peel the onions, cut in half and cut into thin strips. Heat a pan with an tablespoon vegetable oil and fry the onions vigorously. Roast the onions until they are browned and soft.
  2. Preheat the oven to 175 degrees of overheat.
  3. Cut the Bündner Bergkäse into small cubes. Add the flour with the baking powder, the pepper and the salt. In a separate bowl, thoroughly mix the eggs with the cream and vegetable oil. Add the Bergkäse and the fried onion and mix. Subsequently, the flour mixture should be quickly removed.
  4. Carefully grease the muffin panes. Now spread the dough mass onto the molds and bake the muffins for about 20 minutes.
  5. Remove the muffin from the oven and serve warm or cold.
