Ingredients

makes about 40 biscuits

  • 250 g spelt flour
  • 250 g curd
  • 100 g grated Grisons Alpine cheese
  • 1 tsp salt
  • 1 sachet baking powder
  • and according to your liking: Herbs, spices, paprika sauce, tomato paste
  • Cream for brushing
  • optionally sesame seeds or grains for sprinkling

Preparation

  1. Start by mixing the flour, baking powder, curd, salt and grated cheese into a basic dough. Divide the dough into 2 halves. Add paprika sauce and paprika, chili and garlic to first half. Add parsley, oregano and basil to second half. If dough is too soft, add a bit more flour. The dough will quickly be firm and easy to mould, and should not be refrigerated.
  2. Roll out dough and make cut-outs in the shape you want. Brush top side with cream and sprinkle with spices or grains. Give free rein to your imagination. Bake 15-20 minutes at 180° C and let cool.
