  • for a baking tin of 28 cm ø
  • for 8 portions
  • butter and flour for the tin
  • shortcrust pastry:
  • 250 g of white flour
  • ½ teaspoon of salt
  • 100 g of butter, cut into pieces
  • 1 dl of water
  • 300 g of grated, spicy Gruyère cheese
  • 2 dl of milk
  • 2 dl of cream
  • 4 eggs
  • 1/2 tsp of salt
  • pepper

Preparation

  1. 1 For the pastry dough: put the flour, salt and butter into a bowl and rub by hand into a crumbly mixture. Add water and mix into a dough with a ladle or dough scraper. Do not knead. Put in a cool place.
  2. 2 Roll out the dough and lay it in the butter-and -flour-lined baking tin; pierce holes in it with a fork. Spread the cheese out on the dough. Whisk the milk, cream and eggs together, season with salt and pepper, and pour onto the cheese.
  3. 3 Bake the tart for 20-30 mins. until golden brown in the middle of the oven, preheated to 220°C.
