Le Gruyère d’Alpage AOP is produced in the Alps during the summer months. It owes its subtle, characteristic flavour to the wide diversity of pastures and the Alpine flora, as well as to the prime-quality raw milk given by the cows. But the skills of the cheese-makers and affineurs are also crucial to the process.
