L'Etivaz AOP

L’Etivaz AOP is an unpasteurised hard cheese made by hand from raw milk over an open fire, to a traditional recipe, at just over a hundred alpine cheese dairies in the Vaud Alps from May to October. The raw milk is processed directly at the dairies and is bursting with the aromas of the fine alpine herbs.
