The Extra is a cheese with character, and is both fruity and creamy thanks to its maturation period of at least 12 weeks. With its strong, full-bodied flavour, it is a great addition to cheeseboards, but it also tastes equally good served simply with potatoes boiled in their skins. Connoisseurs know it as a good choice to add flavour to fondues.
