Appenzeller® Omelette

Ingredients

  • For 4 persons:
  • 80g Appenzeller®, grated
  • 250g potatoes, cooked
  • 1 onion
  • 1-2 gloves garlic
  • 400g vegetables, e.g. zucchini, pepperoni and leek
  • 2 tbsp butter
  • 8 eggs
  • salt, pepper, nutmeg

Preparation

  1. Cut the potatoes and vegetables into small pieces. Chop onion and garlic.
  2. Fry potatoes in 1 tablespoon of butter in a large frying pan. Add onions, garlic and vegetables and fry over medium heat for about 5 minutes. Season with a little salt.
  3. Mix eggs and the grated cheese. Season with a sprinkle of salt, pepper and nutmeg.
  4. Pour the egg mixture over the vegetables. Use a spatula to stir a few times and then without stirring bake until the underside is golden. The surface should remain a little moist.
