400g vegetables, e.g. zucchini, pepperoni and leek
2 tbsp butter
8 eggs
salt, pepper, nutmeg
Preparation
Cut the potatoes and vegetables into small pieces. Chop onion and garlic.
Fry potatoes in 1 tablespoon of butter in a large frying pan. Add onions, garlic and vegetables and fry over medium heat for about 5 minutes. Season with a little salt.
Mix eggs and the grated cheese. Season with a sprinkle of salt, pepper and nutmeg.
Pour the egg mixture over the vegetables. Use a spatula to stir a few times and then without stirring bake until the underside is golden. The surface should remain a little moist.
