Brioche Toast with Creamy Appenzeller®, Honey Blueberries and Tarragon

Ingredients
Serves 4
200 g fresh blueberries
3 tbsp honey (locally produced)
4 slices brioche bread
butter for cooking
Creamy Appenzeller®:
50 g Appenzeller® Gold Label
100 g cream cheese
1 dl heavy cream
1 tsp apple cider vinega
a pinch of sea salt
For garnishing:
fresh tarragon
Preparation
Combine the blueberries and honey in a bowl.
To prepare the creamy Appenzeller, finely grate the cheese. Mix together with remaining ingredients until creamy.
Heat butter in a skillet and pan-fry the brioche until golden.
Top the brioche with a dollop of creamy Appenzeller® and 1-2 tablespoons of honey blueberries.
Garnish with fresh tarragon and serve immediately.
