Brioche Toast with Creamy Appenzeller®, Honey Blueberries and Tarragon

Ingredients

Serves 4

  • 200 g fresh blueberries
  • 3 tbsp honey (locally produced)
  • 4 slices brioche bread
  • butter for cooking
  • Creamy Appenzeller®:
  • 50 g Appenzeller® Gold Label
  • 100 g cream cheese
  • 1 dl heavy cream
  • 1 tsp apple cider vinega
  • a pinch of sea salt
  • For garnishing:
  • fresh tarragon

Preparation

  1. Combine the blueberries and honey in a bowl.
  2. To prepare the creamy Appenzeller, finely grate the cheese. Mix together with remaining ingredients until creamy.
  3. Heat butter in a skillet and pan-fry the brioche until golden.
  4. Top the brioche with a dollop of creamy Appenzeller® and 1-2 tablespoons of honey blueberries.
  5. Garnish with fresh tarragon and serve immediately.
