French Toast with Creamy Le Gruyère AOP, Lemon Curd and Poppy Seeds

Ingredients
Serves 4
4 slices white bread (preferably day-old)
3 eggs
2 dl milk (3%)
¼ tsk salt
butter for cooking
Creamy Gruyère:
50 g Le Gruyère AOP Mild
100 g cream cheese
1 dl heavy cream
1 tsp apple cider vinegar
a pinch of sea salt
For serving:
4 - 6 tbsp lemon curd
1 tbsp poppy seeds
lemon zest
Preparation
Prepare the creamy Gruyère mixture by finely grating the cheese.
Combine the cheese with the remaining ingredients until creamy.
Whisk eggs, milk and salt in a medium bowl for the French toast.
Dip a slice of bread in the egg-milk mixture and flip to coat both sides. Heat butter in a skillet. Place bread in the skillet and cook over medium heat for about 2 minutes on both sides until golden brown.
Serve with a dollop of creamy Gruyère and lemon curd. Garnish with poppy seeds and lemon zest.
