Herb waffles with Le Gruyère AOP

Ingredients

  • 20 g fresh yeast
  • 2,5 dl milk, lukewarm
  • 2 dl flour
  • 100 g butter, melted + for the waffle iron
  • 4 eggs, yolks and whites separated
  • 2 tbsp each: chives, parsley, oregano, chopped
  • 100 g Le Gruyère AOP, grated
  • salt

Preparation

  1. Dissolve the fresh yeast in the milk. Set aside.
  2. In a bowl, mix the melted butter with the egg yolks and milk with the yeast.
  3. Add the flour and salt to the liquid ingredients. Mix until you obtain a smooth dough. Then add the herbs and grated cheese. Mix and set aside for 30 minutes.
  4. Beat the egg whites until stiff. Using a spatula, gently fold the egg whites into the batter.
  5. Preheat and butter the waffle iron. Ladle in enough batter to cover the surface of the waffle iron. Cook the waffles for a few minutes until golden and crisp.
