In a bowl, mix the melted butter with the egg yolks and milk with the yeast.
Add the flour and salt to the liquid ingredients. Mix until you obtain a smooth dough. Then add the herbs and grated cheese. Mix and set aside for 30 minutes.
Beat the egg whites until stiff. Using a spatula, gently fold the egg whites into the batter.
Preheat and butter the waffle iron. Ladle in enough batter to cover the surface of the waffle iron. Cook the waffles for a few minutes until golden and crisp.
