Tart with Tête de Moine AOP, egg, bacon and cheese curls

Ingredients
For 4 people
1 sheet of chilled puff pastry
125 g crème fraîche
1 tsp paprika
6 slices of bacon
3 eggs
Tête de Moine AOP
Fresh chives
Salt and pepper
Preparation
Preheat the oven to 180°C (forced-air) and line a baking tray with baking paper.
Place the sheet of puff pastry on the baking tray.
Mix the crème fraîche with the paprika and spread over the puff pastry.
Arrange the slices of bacon over the dough and bake in the middle of the oven for 15 minutes.
Break the eggs over the tart and return the baking tray to the oven for 10 minutes.
Make some attractive curls from the Tête de Moine AOP and dot over the tart as soon as it comes out of the oven.
Sprinkle with fresh chives, salt and pepper and serve immediately.
