Ingredients

2 people

  • 2 slices of Pomodoro tomato
  • 1 white onion
  • 1 clove of garlic
  • 6 basil leaves
  • 1 tablespoon of capers
  • 2 dl olive oil
  • 1 teaspoon paprika
  • 10 sprigs tarragon
  • Le Gruyère AOP Mild

Preparation

  1. Finely chop the white onion.
  2. Coarsely chop the Pomodoro tomato.
  3. Press the garlic.
  4. Fry the onion, then add the garlic, tomato and paprika.
  5. Reduce.
  6. Add capers.
  7. Cut Le Gruyère AOP Mild into cubes and add to the fricassee at the end.
  8. Add the chopped tarragon and basil.
  9. Serve on bruschetta.
